Caramel for a 10" round pan

1 1/4 cups brown sugar
1/2 cup butter
1/4 cup bourbon

Cook brown sugar and butter in a saucepan over medium heat, whisking until mixture is bubbling and sugar is completely dissolved. Boil, whisking occasionally, until carmel darkens, thickens and pulls away from sides of pan, about 3 minutes.
Remove from heat and whisk in bourbon (mixture will bubble vigorously). Return caramel to a boil and cook for 1 more minute. Pour caramel into pan that has been coated with Pam. Let it cool completely before proceeding. When cool, put slices of pineapple on caramel topping and then pour cake batter on top. A 10 inch cake bakes about 50 minutes at 350.
