1 1/4 cup butter (2 1/2 cubes)
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt (opt)
1 teaspoon cinnamon (opt)
1/4 teaspoon nutmeg
3 cups oatmeal (quick, old fashioned or a combination of both)
Raisins if desired

Directions:
Directions:
Preheat oven to 375ºF.
Beat together sugars and butter until light and fluffy. Beat in egg and vanilla. Combine flour, soda, salt and spices and add to butter mixture, mixing well. Stir in oats. Drop by rounded tablespoonfuls onto an ungreased cookie sheet.
Bake 8-9 minutes for chewy cookies or 11 to 12 minutes for crisp cookies.
