24 Ritz crackers, broken in small pieces
1 cup sugar
1 cup chopped pecans
1 tsp. vanilla
3 egg whites (room temperature)
1/2 pt. heavy cream, whipped

Directions:
Directions:
Combine Ritz cracker crumbs, 1/2 cup sugar, pecans and vanilla in bowl. In another bowl, beat egg whites until stiff gradually adding 1/2 cup sugar. Fold egg white mixture into Ritz cracker mixture. Put in greased 9-inch pie pan. Bake at 350º for about 25-30 minutes. Top with whipped cream at least 4 hours before serving. Shave a little chocolate over the whipped cream..
