1 pound ground uncooked hot sausage (I use Jimmie Dean)
3½ cups Bisquick (may have to add a little more if the dough is too moist)
4 cups sharp cheddar cheese (shredded)
1 jalapeno pepper, chopped very fine
1 medium onion chopped fine
1/2 large red bell pepper chopped fine
2 large eggs
Dash of ground cayenne pepper (or to taste)
1 teaspoon lemon pepper (or to taste)
½ teaspoon black pepper (or to taste)
1 teaspoon dried, ground chipotle pepper (or to taste)
Dash (or 2) of garlic powder

Preheat oven to 400º. Lightly grease cookie sheet or spray with cooking spray. Mix all dry ingredients thoroughly. Add cheddar cheese, pepper, onion, eggs and spices. Mix all ingredients well. Continue mixing until the dough forms a tight ball. Pinch off pieces of dough and roll in your hands to form 1 inch balls. Place on greased cookie sheet approximately ¾ inch apart. Bake for 15 minutes or until the sausage balls are nice and brown. These are best when served warm.
