6 lbs ground pork
2 cans water chestnuts, chopped
1 onion, chopped
1/2-1 cup finely chopped carrots
10 eggs
12 cloves garlic, chopped
2 tsp. pepper
paprika
salt (1-2 Tblsp)
soy sauce (about 30 shakes)
spring roll wrappers (extra thin for crispier shells)
Sweetened chili sauce for dipping

Mix first 10 ingredients together. Roll a small amount of meat mixture into each shell. Roll up and seal with a mixture of 2 egg whites and a Tbls of flour. Fry in oil until browned. Dip into sweet chili sauce.
