3 lb. asparagus, ends trimmed
2 tbsp. extra virgin olive oil
1/2 tsp. kosher salt
1/4 tsp. black pepper
1/2 c. feta cheese, crumbled (optional)

Directions:
Directions:
Put oven rack in lower third of oven and preheat oven to 500º. Toss asparagus with oil, salt and pepper in a large shallow baking pan and arrange in one layer. Roast, shaking pan once about halfway through roasting, until asparagus is just tender when pierced with a fork, about 8-14 minutes total. Serve asparagus sprinkled with cheese, if desired.
