6 qts. tomatoes (skinned and cut up),
4 large chopped green peppers
3 large chopped onions
6-8 jalapeņos
3 Tbsp. preserving salt
1/2 Tbsp. pepper
2 1/2 to 3 cups white vinegar

Directions:
We use a food processor to chop peppers, onions and jalapeņos. Cook in large canning pan until desired thickness (3 or so hours). Stir often and stir more often towards end of cooking to prevent scorching. Process in jars. We use a steamer and that takes 20 minutes. Hot water bath probably the same time.

We add more jalapeņos and usually leave most seeds in. Leave seeds out for less hotness.
