1 lb. Salmon or 4-4 oz. Salmon fillets
1/2 tsp. Salt
1/4 tsp. ground Black Pepper
2 tsp. Canola Oil (or Vegetable Oil)
1/4 C. Water
1/4 C. Balsamic Vinegar
4-1/2 tsp. Lemon Juice
4 tsp. Brown Sugar, packed

Directions:

Sprinkle both sides of salmon with salt and pepper.
In a large nonstick skillet, cook salmon in oil over medium heat for 10-15 minutes, or until fish flakes easily with a fork, turning once half way through cooking time. Remove from skillet and keep warm.
Combine the water, vinegar, lemon juice and brown sugar together; pour into skillet. Bring mixture to a boil; cook until liquid is reduced to about 1/3 C.
Serve sauce over salmon.

**Grilling directions for Salmon.
If you prefer to grill the salmon, lightly oil the grill grate. Place salmon on the preheated grill. Grill salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
