15 oz. tube Refrigerated Sugar Cookie Dough
2 C. fresh, very ripe Strawberries, mashed
2 C. whole ripe Strawberries, cut in half
3 Tbsp. Corn Starch
1 C. Sugar
Whipped Topping (Cool Whip, Reddi Whip or Whipped Cream)

Preheat oven to 350º.
Freeze cookie dough until very firm, but not frozen. Slice dough very thin and cover the bottom and 1-inch up the sides of a 10-inch Spring-form pan. Bake for 12-15 minutes, until brown. Cool.
In a saucepan, combine sugar, corn starch and mashed strawberries. Cook slowly for about 10 minutes, until thick. Cool slightly and fold in the whole strawberries. Pour into cooled cookie crust. Chill and decorate with whipped topping. Carefully remove from pan and place on a serving plate.

Variation: You can double the ingredients, except for the crust. Pat the cookie dough evenly into the bottom only of a 9" x 13" pan. Make recipe as directed, doubling remaining ingredients.
