3 Eggs
2 C. Sugar
1 C. Vegetable Oil
2 tsp. Vanilla Extract
2 C. peeled and grated Zucchini Squash
3 C. Flour
1 tsp. Salt
1 tsp. Baking Powder
1/2 tsp. ground Cinnamon
1 C. Walnuts or Pecans, chopped, optional

Directions:
Directions:
Preheat oven to 350º.
Beat eggs. sugar, oil and vanilla together. Stir in zucchini.
In a separate bowl, sift together flour, salt, baking powder and cinnamon.
Gradually add dry ingredients into egg mixture and mix well. Stir in nuts.
Bake in two greased and floured loaf pans for one hour.

*Note: If you are using glass pans, reduce oven temperature to 325º.
