6 potatoes, peeled and thinly sliced
1/4 c. Butter
1/4 c. Flour
1 1/2 c. Milk
1 1/2 c. Chicken Broth
1 tsp. Salt
1/4 tsp. ground Black Pepper
1 Onion, diced (optional)
1/4 c. Dijon Mustard
2 c. Ham, cubed
1 c. shredded Cheddar Cheese (or your favorite cheese for variety)
2 Tbsp. chopped Fresh Parsley (optional)

Directions:
Directions:
Preheat oven to 350º.
Cover sliced potatoes with cold water until ready to use, then drain and pat dry with paper towel.
In a medium saucepan, melt butter and blend in flour, cook for 2 minutes over low heat. Add milk and broth and cook, stirring constantly; until thickened. Add salt, pepper, onion and mustard, mix well.
In a 2 qt. greased baking dish, layer potatoes, ham, cheese and sauce; ending with sauce.
Garnish with chopped parsley, if desired.
Bake for 1 1/2 hours or until potatoes are fork tender.
