Ingredients:  
2 tsp olive oil
1 1/2 cups chopped onion
1 medium carrot (3/4 cup), halved & sliced
1 garlic clove minced
1/2 cup long grain rice or orzo pasta, uncooked
1 tsp Italian seasoning
2 1/2 cups water
2 cans (29oz total) stewed or diced tomatoes
10 1/2 oz can chicken or vegetable broth
1 medium zucchini, halved & sliced
15oz can cannellini beans, drained
10 oz frozen spinach, thawed & drained
2/3 cup grated Parmesan cheese
salt & pepper to taste

Directions:
Directions:
Heat oil in a large pot, add onion, garlic & carrot. Saute for 3 minutes, add rice and next 4 ingredients. Bring to a boil. Cover, reduce heat and simmer 20 minutes. Add zucchini & next 4 ingredients, cook 5 minutes. Serve with extra grated Parmesan cheese.
