1 1.4oz packege fajita seasoning
1 Tbs vegetable oil
1 medium onion, chopped
1 garlic clove, minced
1 15oz can corn with red & green peppers, drained
1 15oz can black beans, drained
1 14oz can diced tomatoes
3 cups water
1 Tbs lime juice
1 cup uncooked instant brown rice
1 10 3/4oz condensed nacho cheese soup or fiesta nacho soup
3 Tbs chopped fresh cilantro

Directions:
Directions:
Saute onion and garlic in oil about 3 minutes. Add package of fajita seasoning, corn, black beans, tomatoes, water and brown rice. Bring mixture to a boil, reduce heat to medium low, cover and simmer 5 minutes. Stir in nacho cheese soup, chopped cilantro and lime juice. Serve with cheese, sour cream and tortilla chips.
