1 1/2 c. chopped onion
2-3 garlic cloves minced
4 c. baked sweet potatoes, deskinned
1/2 tsp. oregano
1 tsp. chili powder
2 tsp. cumin
pinch of cayenne, if you want to add heat
2 c. grated cheddar cheese
Tortillas

Directions:
Directions:
Saute onions and garlic. Add all seasonings and mix well.
Mash baked sweet potatoes, add onion mixture, salt, pepper and cheese.
Cover half a tortilla with the mixture then fold the other half over the top. Brown both sides of each tortilla in a skillet or on a grill to desired crispness.
