3 Tbsp. extra virgin olive oil
1 Tbsp. butter
2 large, yellow onions, minced
2 Tbsp. ground cumin
2 tsp. dried oregano
1 1/2 tsp. crushed red pepper flakes
2 pounds boneless, skinless chicken, cut in cubes
4 (15oz)cans of cannelini beans
4-6 cups of good chicken stock
2 (7oz) cans of chopped green chilies
1cup of heavy cream
1 cup of chopped fresh cilantro
juice of one lime
s & p to taste
diced avocado & sharp white cheddar for garnish

Sautee the onions and garlic in olive oil and butter in a large soup pot over medium heat. Add spices and push onion mixture to one side. Add chicken and cook until tender. Add beans (rinsed), stock, chilies, cream, cilantro and lime juice. Let simmer on medium-low heat for 15 minutes while you shred the cheddar and dice the avocado to sprinkle on top of each serving.
