2/3 C. Butter, melted
1/2 C. dry Bread Crumbs
2 Tbsp. grated Parmesan Cheese
1 tsp. Basil
1/2 tsp. Garlic Salt
2 Chicken Breasts, split (4 split breasts)
1/4 C. dry White Wine or Apple Juice
1/4 C. chopped Green Onion
1/4 C. chopped Parsley

Directions:

Preheat oven to 375º.
Place each piece of chicken between 2 pieces of wax paper and pound the breasts flat with a meat mallet or with the bottom of a heavy glass.
Assemble a dipping station:
Place melted butter in a shallow bowl.
On a piece of wax paper, combine bread crumbs, cheese, basil and garlic salt.
Dip one side of each chicken breast in melted butter, then dip in bread crumbs to coat. Roll each chicken breast piece up (breaded side out), place seam side down in an ungreased 9-inch square baking dish.
Bake for 50-60 minutes. While chicken is baking, add wine, onion and parsley to remaining butter. Mix well. When the chicken is golden brown, pour butter sauce over the top and around the chicken. Return chicken to oven for 3 to 5 minutes more, or just until sauce is hot. Spoon sauce over chicken to serve.
