Ingredients: Crust Ingredients:
Milk mixture: 1 c. milk, scalded then cooled to lukewarm 2 pkg. yeast dissolved in 1/2 c. lukewarm water
Mix in large bowl: 4 c. flour 1/2 c. white sugar 1 tsp. salt 1 c. lard 3 tbsp. butter
Beat in milk mixture and add 3 beaten eggs. Mix thoroughly. Cover bowl and refrigerate overnight.
Cheese Filling: Beat together: 1 small pkg. instant vanilla pudding 1 cup milk
Add to: 24 oz. cottage cheese (large curd) 13 1/4 oz. crushed pineapple (strained) 2 beaten eggs pinch of salt and 1/2 c. sugar Mix thoroughly and fill coffee cakes.
Topping: 1 c. flour 1/2 c. sugar cinnamon pinch of salt enough butter to make crumbly
Cover filling with topping and add a little topping to the folded over crust.

Directions:Divide dough into 8 parts and roll out with floured cloth and rolling pin. Grease eight 8" aluminum pans and place rolled out dough in each pan. Add filling, fold over excess dough and add topping. Let rise 1 hour. Bake at 375º until crust is lightly browned. Cool a little and then remove from pan to a cloth for further cooling. |

Notes: As you know, when Grandma Bednarz made coffee cakes, SHE MADE COFFEE CAKES. I was finally able to get approximate ingredients from her and in a small amount--not 100 cakes! These really turn out well, however, be warned they don't last long as soon as everyone gets a taste. One time I made 24 coffee cakes and David, Troy and Courtney finished them off in less than a week.
