2 lbs. ricotta cheese
2/3 c. white sugar
1/3 c. all-purpose flour
6 eggs
1/4 tsp. ground cinnamon
2 tsp. orange zest
2 tsp. vanilla extract
1/8 tsp. salt

Directions:
Preheat oven to 300º. Butter and flour a 9 1/2 " springform pan and tap out excess flour. Place ricotta in large bowl and stir until smooth. Stir in sugar and flour thoroughly. Stir in eggs one at a time to prevent batter from getting lumpy. Blend in vanilla (or any flavoring that you like), cinnamon, orange zest and salt. Pour into prepared pan. Bake in center of oven for 75 to 90 minutes until ight golden color. Make sure center is fairly firm and point of sharp knife comes out clean. Cool on wire rack. It will sink slightly as it cools. Cover and chill until serving time.
