1 box penne regatta
1 1/2 - 2 lbs Italian Sausage
1 lb fresh mushrooms
1 1/3 C fresh grated Parmesan cheese
1/3 C fresh grated Asiago or Romano cheese

Sauce:
1/2 C butter, melted
1 1/3 C light cream
1 1/3 C sour cream
4 egg yolks

Directions:
Directions:
Cook penne regatta according to directions.

Brown sausage in a frying pan. When cooked drain well. Add mushrooms to the skillet and saute until tender. Add the sausage and keep warm.

Combine all the sauce ingredients in a saucepan. Whisk well to blend. Heat gently over medium heat until warm and slightly simmering. Watch carefully and stir often. Drain pasta. While hot toss with the sauce and the meat in a large bowl or kettle. Add the cheeses. Serve immediately.
