1 1/2 c packed brown sugar
1/2 c canola oil
1 egg
1 c buttermilk
1 tsp vanilla
2 1/2 c flour (you may use 1 c whole wheat if desired)
1 tsp baking soda
1 tsp salt
1 1/2 c chopped fresh or sliced/drained frozen rhubarb
1 tsp cinnamon
1/2 c chopped nuts

TOPPING
1/2 c sugar
1/2 tsp cinnamon
1 Tbl cold butter

Directions:
Directions:
In large bowl, combine brown sugar and oil. Beat in egg. Beat in buttermilk and vanilla. Combine dry ingredients and stir into brown sugar mixture until combined. Fold in rhubarb and nuts. Pour into two greased and floured 8X4 loaf pans.

For topping: in a small bowl, combine the sugar, cinnamon and butter until crumbly: sprinkle over batter, patting a little into batter.
Bake at 350º for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes before removing from pan to wire rack. Cut with serrated knife.
