4 Eggs
2 C. Sugar
1 C. Salad Oil
15 oz. can of Pumpkin
2 C. Flour
1/2 tsp. Salt
1/2 tsp. ground Cloves
2 tsp. Baking Powder
2 tsp. ground Cinnamon
1/2 tsp. ground Nutmeg
1 tsp. Baking Soda
1/2 tsp. ground Ginger
Frosting:
6 oz. Cream Cheese, softened
6 Tbsp. Butter, softened
1 tsp. Vanilla Extract
1 tsp. Milk or Cream
4 C. Powdered Sugar

Preheat oven to 350º.
Bars:
Mix eggs, sugar, salad oil and pumpkin in a large bowl and beat until well combined. In a separate bowl, sift the flour and salt together, add to egg mixture; stir well. Mix in remaining ingredients well and pour into a greased and floured 12" x 18" pan. Bake for 25-30 minutes, cool.
Frosting:
Beat cream cheese, butter, vanilla extract and milk together until soft. Gradually add in powdered sugar and beat to a creamy consistency. Spread evenly over cooled bars. Cut into 2" x 3" bars.

A favorite in the fall and at Thanksgiving, some prefer the bars to pie. This recipe does make a lot. These bars freeze well.
