Dressing:
3/4 cup vinegar
1 cup sugar
1 tbsp. water
1/2 cup oil
1 tsp salt
1/2 tsp pepper

Boil dressing for one minute. Set aside to cool completely while you prepare the veggies for the salad.

Salad:
1 cup chopped celery
3/4 cup chopped orange or yellow pepper
1 can white corn, drained (you can use yellow)
1 can black-eyed peas, rinsed and drained
1 can pinto beans, rinsed and drained
1-2 fresh jalapenos, finely chopped (wear gloves and take out seeds & veins if you don't want spicy)
1 small jar pimentos drained
1 small onion or one bunch of green onions, chopped

Directions:
Directions:
Mix all SALAD ingredients together with cooled dressing and marinate for several hours or overnight (best). Drain liquid before serving. You can keep reserved liquid and use for salad dressing.

Serve with tortilla chips ("Scoops" work great) or serve over a green salad.
