Ingredients:  
1 medium potato
1/2 lb butter
2 lbs confectioners sugar
1 tsp vanilla
Optional, coconut or chocolate pieces

Directions:
Directions:
Cook the potato. While hot, mix butter in, then the sugar and vanilla.
If adding coconut, add at this time.
Knead candy and shape to size eggs desired.
Dip in chocolate if wished.
Let sit at room temperature for 1-2 weeks to age.
