1 1/2 lb. boneless, skinless Chicken Breasts, cubed
6 Tbsp. Butter, melted
3 stalks Celery, chopped finely
3 Carrots, peeled and chopped
1/2 Onion, chopped
1 tsp. Poultry Seasoning
1/2 tsp. Black Pepper
3/4 C. Flour
4 C. Water
4 Chicken Bouillon cubes
1 C. Milk
4 oz. frozen Peas ** See Note!
10-3/4 oz. can Cream of Chicken soup

Directions:
In a medium-sized pot, add the cubed chicken and enough water to cover. Boil over high heat until the chicken is cooked through (there should not be any pink in the middle), remove chicken to a plate.
Melt the butter over medium heat and add the celery, carrots, onions, poultry seasoning and black pepper. Saute until the vegetables become soft. Add the flour and stir continuously to prepare a roux.
In a large saucepan, add water and the bouillon cubes. Bring to a boil over medium heat. Once the mixture comes to a boil, turn off the heat. Add the vegetable mixture and stir to combine.
In a separate pan, combine the milk and soup and simmer until heated through. Add the milk mixture, the chicken and the frozen peas to the vegetable mixture and simmer for about 5 minutes.
If the sauce is too thick, add a little milk to thin.
Spoon the chicken mixture over buttermilk biscuits or puff pastry shells.

**I don't like Peas, they taste green, like chlorophyll! Ha Ha! I leave them out!
