2 Tbsp. Olive Oil or Vegetable Oil
1 rack Pork Baby Back Ribs, cut into individual ribs
Salt and Pepper
Italian Seasoning
Garlic Powder
1 onion, chopped
1 clove Garlic, minced
1 lb. bag Sauerkraut
1/2 C. Water

Directions:
Directions:
Place Dutch oven over medium-high heat and heat the oil.
Season the ribs with the salt, pepper, Italian seasoning and garlic powder. Place ribs, meat side down and sear them in a single layer. Remove the ribs from the pan; set aside.
Add the onions and minced garlic to the pan and saute until softened, scraping up any browned bits from the ribs.
Add the ribs back in and cover with sauerkraut. Pour the water over the top.
Bake covered in 350º oven for 2-3 hours, until the ribs are very tender. Check ribs and sauerkraut periodically, if they are getting too dry, stir in a little water to keep it moist.
