6 1/ c. flour
2 c. sugar
1 c. cocoa
1 tbsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves
1 tsp. pepper
1 c. shortening
2 c. milk
2 c. nuts
12 oz. chocolate chips

Most Italian cookies are mixed in a large bowl or on a wooden board.

Mix all dry ingredients together in a large bowl. Make well and add shortening and milk. Mix into a ball and knead well. Last add nuts and chocolate chips and knead these well into the dough. Shape into balls the size of a walnut and place on greased baking sheet. Bake at 350º for 10-12 minutes but do not overbake.

You can frost with confectionary sugar, a little milk and cocoa to make chocolate frosting. Or, make a thin confectionary sugar coating with milk and any flavor and dip the whole cookie in and dry on racks.
