1-1/2 lb. lean beef cut into strips or cubes
1 medium onion, diced
2 Tbl finely diced garlic
8 oz. mushrooms, sliced
1 Tbl. tomato paste
8 oz sour cream
salt and pepper to taste
1 12oz package uncooked noodles

Directions:
Directions:
1- Season the beef with salt and pepper, set aside. Cook noodles according to package instructions, drain and set aside.

2- In a large skillet, saute the onions in 2 Tbl butter or margarine. Add the garlic when the onions are just clear.

3- Add the mushrooms to the skillet. If there is not much butter remaining, add a little more at this time. Salt and pepper the skillet ingredients and cook until the mushrooms begin to soften.

4- Add the reserved meat to the skillet and brown. This will produce more juices and help with the cooking of the mushrooms. Once the meat is browned, add the tomato paste and stir in well. Fold in the sour cream until all is well combined.

5- Pour the meat mixture over the noodles and serve.
