2 or 3 Ham Hocks * (parboiled)
1 lb. Black-eyed Peas**
1 or 2 Coarsely Diced Onions
1 or 2 Stalks Sliced Celery (plus all the leaves you can get)
1/2 C. Spaghetti Sauce
1 lb. Kluski Noodles (cooked el dente)
Salt to taste
Water

*Ham Hocks - Parboil and rinse afterwards with cold water. Also use any left over ham, and stock that is saved from the baking ham. Cool, save ham for soup.

**Black-eyed Peas - Mom does not soak these beans over night. just wash well, removing any bad beans and skin that may come off.

Add all the above, except noodles. Cook covered at a low boil (not just a simmer) until beans are cooked - about 3 hours. Turn off heat and 1 lb. cooked Kluski noodles. Add some grated Romano cheese to taste.©

Grandma made her own noodles, of course. You can use any type of macaroni you like, but she feels the thicker Kluski noodles are better. Break up before cooking noodles so they will not be so long when eating with a spoon.
