1-1/2 C. boiling Water
1 C. Quick cooking Oatmeal
1 C. Brown Sugar, packed
1 C. Sugar
1/2 C. Butter, softened
2 Eggs
1-1/2 C. Flour
1 tsp. Baking Soda
1/2 tsp. ground Cinnamon
1/2 tsp. Salt
1 tsp. Vanilla Extract
Frosting:
1/2 C. Butter, softened
1 C. Brown Sugar
1/2 C. Evaporated Milk or Cream
1 C. Flaked Coconut
1 tsp. Vanilla Extract
1/2 C. Walnuts or Pecans, chopped

Directions:
Preheat oven to 350º
Cake:
Pour water on oatmeal, let stand 20 minutes. In a separate bowl cream together the brown sugar, sugar and butter. Beat in eggs. Stir in flour, baking soda, cinnamon, salt and vanilla extract. Add oatmeal mixture and mix well. Pour batter into a greased 9" x 13" cake pan. Bake for 25-30 minutes.
Frosting:
In a saucepan, combine butter, brown sugar and evaporated milk. Bring to a boil, stirring constantly. Boil for 8-10 minutes. Remove from heat. Stir in coconut, vanilla extract and chopped nuts. Mix well. Frost cake while it is still warm.
