1 1/4 lb ground beef (we use turkey)
1 pkg cheese tortellini
2 cans diced tomatoes (the kinds with basil, garlic and oregano or some type of flavor are good in this), undrained
2 C lightly packed fresh spinach (we use 1 frozen pkg spinach, thawed and water squeezed out of)
1/4 C chopped black olives
1/2 C crumbled feta cheese

Directions:
Directions:
Cook tortellini according to pkg directions, drain. Meanwhile, brown and crumble beef (or turkey) until cooked through. Pour off any drippings. Add tomatoes, bring to a boil. Reduce heat, simmer 10 min stirring occasionally. Stir in tortellini, simmer 3 min, add spinach and black olives. Cook until spinach is wilted (or if using frozen, til warmed through). Sprinkle with feta before serving.
