1 C. Crisco © Shortening
6 large Eggs
2 C. Flour
1 tsp. Lemon Extract
1 tsp. Vanilla Extract
1 tsp. Rum Extract

Directions:
Directions:
Preheat oven to 350º Place a 9" x 13" pan, with 1-inch of water in it; on the oven rack, below where the cake will be baking.
Cream shortening and sugar together. Add eggs and stir until combined. Stir in flour and extracts, mix until smooth.
Pour batter into a greased Angel food or Bundt cake pan. Bake for 1 hour.
Remove from oven, cool upside down on a cake plate. Run a knife carefully along the edges of the pan. Remove cake from pan when cool.

This is a recipe I wrote down one summer in the late sixties when our Dad's mother and our grandmother, Clara Henderson, was staying with us. She had the recipe in her head and I wrote down the ingredient's and the directions as she made this wonderful Cake. Also see her Pound cake recipe which is very similar to this and is a family favorite.
I believe Grandma may have also referred to this as Rum Cake, but I am not 100% positive.
