Broiled Slipper Lobster Tails Recipe

8 slipper lobster tails
1 stick melted butter
1 tbsp dry rub or seasoning mix
1 lemon

Directions:
Directions:
Set oven to broil at 375º. Wash slipper lobster tails under cold water. Using a pair of kitchen scissors, slit the shells from front to tail, stopping just short of tail. Gently run your finger down the inside of each shell to loosen the meat from the shell. Gently lift the meat out and lay it over the top of the shell. Do not detach the meat from the tails fan. (The part of the tail that spreads like a fan). Place the tails on a cookie sheet or shallow baking dish. Cut lemon in half and squeeze the juice over the tails. Using a teaspoon, spoon the melted butter over each tail making sure to cover the meat completely. Lightly season with the dry rub or seasoning mix and place the tails under the broiler for 15 minutes or until the meat is translucent. DO NOT OVERCOOK TAILS.

Translucent is when the meat is cotton white and firm. Overcooked tails may be tough and rubbery.
