1 apple, peeled and chopped
1 c. shredded sweet potato
1 1/2 c. grated carrot
1/2 c. apple juice
1/2 c. crushed pineapple, drained
1 c. chopped pecans
1 1/2 c. (3 sticks) butter, softened
1 c. brown sugar
1 c. white sugar
2 tsp. vanilla
3 eggs
2 1/2 c. flour
1 tsp. baking powder
1 tsp baking soda
1 tsp. cinnamon
1/4 tsp. salt
Frosting:
2 (8-oz.) pkg. cream cheese
1 stick butter, softened
2 tsp. vanilla
1 T. lemon juice
2 lb. powdered sugar

Directions:
Directions:
Cream the butter and sugars; beat in eggs one at a time. Add the vanilla. Sift all dry ingredients together and add to the creamed mixture, alternating with the apple juice. Stir in the remaining ingredients. Spoon batter into 3 (9-inch) layer pans which have been greased, floured and lined with parchment paper. Bake at 350º, 25-30 minutes. Remove from the oven and allow to cool in pans for 10 minutes. Remove the layers from the pans and carefully peel off parchment paper. Frosting: Beat all ingredients together to form a fluffy topping and filling for the cake layers. Garnish with additional pecans if desired.
