1/2 cup peanut butter
1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 egg
1 tsp vanilla
1 1/4 - 1 1/2 cup all purpose flour
1/4 tsp salt
1/4 tsp baking soda

Directions:
Directions:
Cream together sugars, butter, peanut butter, egg and vanilla. Set aside. Mix together remaining dry ingredients and add to first mixture. Spoon by teaspoonfuls on baking sheet , or roll into 1 inch balls. Place on ungreased cookie sheet 2 inches apart and flatten with fork dipped in sugar to form crisscross. Bake 10-12 minutes at 375º . Cool slightly and remove to cooling rack.

You can use self rising flour as well but omit the salt and baking soda This recipe can double and even triple easily. On a personal note, I accidently forgot to add butter once and you really couldn't tell it I just told everyone they were low fat! :)
