7 1/2 cups flour
2 pkgs active dry yeast
2/3 c sugar
1tsp salt
2 cups warm potato water
2/3 c oil
2 c mashed potatoes w/o milk or butter
2 eggs

Directions:
Directions:
In a large mixing bowl combine 2 c of flour, 2/3 c sugar, yeast and salt. Add warm potato water and oil and beat till moist. Add the mashed potatoes and eggs and beat till smooth. Gradually add the remaining flour to form a stiff dough. (do not knead), place in a greased bowl and turn to grease other side. Cover and refrigerate for a few hrs or overnight if you wish. Take out the dough and place on a lightly floured surface. Divide the dough in half with greased hands and shape ea. portion into small 1 to 2 inch balls. Grease 2 muffin pans and place 3 balls in each one, creating a clover like roll. You may also make larger balls and place them together in a round tin. Cover and let rise for appx 2 hrs. till doubled in size. Bake at 375 for 25 to 30 min. till golden brown
