For the turkey roll:
3 lb ground turkey
2 eggs
1 cup bread crumbs
6 cloves fresh garlic (minced)
1/2 cup of chopped pistachio (optional)
2 tsp all-spice,
2 1/2 tbs salt or to taste,
1/2 tsp black pepper

For the large boiling pot:
1 cinnamon stick
2 tbsp salt (or to taste)
3 pieces of bay leaves
1 tsp whole black pepper or pepper corn
2 1/2 cup rice vinegar or any
10 cups of water for boiling

In a mixing bowl add meat, bread crumbs, eggs, garlic, salt, & all-spice. Mix well until the meat is combined. Then set aside in the fridge for 1 hour or more.

Divide the meat mixture into 4 portions. Take one portion. Open some plastic wrap and spray some water on the plastic. Put the meat in and flatten the meat to look like a disc. Sprinkle some of the pistachio on the top of it and press down to roll it with the plastic. (Make a roll that looks like a sushi roll) and refrigerate overnight.

In a large open pot, add the water, vinegar, cinnamon, bay leaves, black pepper, and salt to taste. Bring to a boil, then place the roll of meat with the plastic wrap on to the boiling water carefully. Cook for 10 min with the plastic wrap. After 10 min remove the wrap and keep the roll to cook for another 15 to 30 minutes max on medium high. Remove the roll to the side to cool for 1 hour, cut to 1/4 inch slices. Serve cold like cold cuts.
