Directions:
Boil chicken for 20 minutes.
Shred Chicken.
Mix chicken with ½ pkg. of taco seasoning and 2 Tbs. of water. Then add 2 cups of Mexican cheese. Mix with hands! It works best!
Preheat oven at 400.
Pour evaporated milk and green enchilada sauce in a round cake pan. Stir with a fork. Separated tortillas and place each one in the sauce to soak. Get an empty dinner plate ready for tortillas.
Take 1 tortilla, place on plate, add chicken/cheese mix, roll it up (I push the sides in, then roll it) and place it in a baking dish, seam side down. Continue with the remaining tortillas.
Pour remaining sauce over all of the tortillas, then add some taco sauce on top.
Bake at 400 for 20 minutes!!
