1 lb. fresh sea scallops
1 T. olive oil
1/2 lemon
1/2 orange
1/4 grapefruit
1 T. maple syrup

Directions:
Directions:
Heat olive oil in saute pan. Sear sea scallops about 4 minutes - 2 minutes on each side. Remove from pan to plate - cover with foil.

Citrus Mixture:
Squeeze juice from lemon, orange and grapefruit. Bring to boil and cook down by half, about 3-4 minutes. Add 1 tablespoon of maple syrup. Cook 1 minute longer.

Add scallops and simmer in sauce for about 2 minutes - 1 minute on each side.

Serve as entree, appetizer or on a bed of spinach.
