1/3 cup soy sauce

1/3 cup sugar

2 to 2½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon all-purpose flour

1 teaspoon kosher salt

½ teaspoon ground pepper

2 tablespoons olive oil

1½ cups white rice, cooked according to package directions

¼ cup chopped green onions

2 tablespoons sesame seeds

In a small bowl, combine soy sauce and sugar and whisk to combine. Set aside.

In a large bowl, combine chicken thighs, flour, salt and pepper. With your hands, toss chicken until all pieces are coated in flour. In a large skillet over medium high heat, add olive oil. Once oil is heated, add chicken. Saute until chicken is cooked through, about 5 minutes. Give the soy sugar mixture a final whisk and then pour over the chicken. Simmer, stirring often, until sugar is dissolved and mixture is slightly thickened, about 5 minutes.

Spread cooked rice into a large serving platter. Pour chicken and sauce over the rice and sprinkle green onions and sesame seeds on top.

I always add some veggies to this recipe too. Saute some carrots, broccoli, onions, etc and add to sauce with chicken.
