2 tsp Olive Oil
1 1/4 pounds lean Ground Beef, Turkey or shredded Chicken
1 Onion
2 cloves Garlic
1 Bell Pepper
8 oz. Mushrooms
14 oz can crushed Tomatoes
32 oz bottle Tomato Juice or V8
1 tbsp. fresh Lemon Juice
14 oz can Red Beans and/or Garbanzo Beans
1 tbsp. ground Cumin
1/8 tsp Cayenne Pepper
1/4 cup fresh Cilantro and Parsley, chopped
1 medium Zucchini

Directions:
Saute meat in olive oil. saute onion, garlic, peppers and mushrooms. Stir in remaining ingredients except cilantro and parsley. Cover and simmer for 20 minutes. Stir in cilantro and parsley and simmer for 10 more minutes.

Rotisserie chicken works well as the meat in this soup too. I usually double this recipe and put in 1 can of light red beans and 1 can of Garbanzo beans.
