6-8 large potatoes, peeled
1 cup sour cream
1/2 cup margarine
1 (10-oz.) pkg. frozen spinach, thawed
1/2 cup chopped onion
1 Tbsp. sugar
2 tsp. salt
1/4 tsp. pepper
1 1/2 cups shredded cheddar cheese

Directions:
Directions:
Preheat oven to 400º. Cook potatoes in boiling water in saucepan until tender; drain. Mash with sour cream and margarine in bowl. Add spinach, onion, sugar, salt and pepper; mix well. Spoon into 2-qt. baking dish. Sprinkle with cheese. Bake for 20 minutes or until lightly browned and cheese is melted.
