1/2 lb. sushi grade tuna
1 lime
3 Tbsp. sugar
2 Tbsp. soy sauce
1 tsp. hot chile oil
1/4 cup fresh ginger, peeled and chopped
1/4 - 1/3 cup olive oil
1/4 cup rice vinegar
Sesame seeds (optional)

Directions:
Put tuna in freezer for about 1/2 hour until firm enough to slice. Slice tuna in very thin slices vertically. Combine the juice of one lime with sugar and stir over medium heat until sugar dissolves and just starts to boil. Remove from heat and cool. In a bowl of a food processor, add ginger and process. While machine is running, drizzle enough olive oil to make a smooth paste. Combine ginger mixture, lime mixture, chili oil, soy sauce and vinegar together. Add tuna to marinade and toss to coat. Refrigerate for 1 hour. Garnish with toasted sesame seeds if desired.
