1/2 lb feta cheese, sliced
6 chicken legs with thighs
1 tablespoon plus 1 teaspoon olive oil, divided
4 medium onions, thinly sliced
2 large cloves garlic, minced (2 teaspoons)
1 17-oz can plum tomatoes, with liquid, coarsely chopped
1/2 teaspoon oregano
1/4 teaspoon salt, if desired
Freshly ground black pepper to taste

Place feta in a bowl with cold water to cover, and set aside. Remove and discard chicken skin and trim away fat. Heat one tablespoon oil in a 10-inch heavy skillet with cover. Brown chicken over moderate heat, turning several times. Transfer to a platter. Add teaspoon of oil to pan along with onions. Cook over moderately low heat, stirring, about 10 minutes. Add garlic and cook another five minutes, or until onions start to brown. Add tomatoes and their liquid and oregano, stirring to combine. Place chicken on the sauce and sprinkle all with salt (if desired) and a generous amount of pepper. Cover, bring to a boil, reduce heat to medium-low and simmer 30 minutes. Remove feta from water and arrange on top of chicken. Cover skillet and cook another 15 minutes or until cheese is melted.
