1 1/2 c. sugar
3 eggs
1 c. salad oil
1 1/2 c. sieved beets
2 squares melted chocolate
1 3/4 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
Directions:
Directions:
Cream sugar with eggs. Add oil, beets, and melted chocolate. Sift together flour, soda, and salt. Add mixture along with vanilla. Mix lightly. Bake in two 8" round cake pans at 350º for 20 to 25 minutes. (Use fresh cooked beets or canned drained beets.)
