Cake:
1 c. butter
2 c. sugar
5 whole eggs
3 1/2 c. all-purpose flour
3 tsp. baking powder
1 c. coconut milk (sweet milk can be used)
1 tsp. vanilla

Sour Cream Coconut Icing:
2 c. powdered sugar
2 c. sour cream
1 - 9 oz. carton Cool Whip
1 tsp. vanilla
3 c. coconut

Directions:

Cake Directions: Preheat oven to 350º. Cream butter and sugar. Add eggs. Combine flour and baking powder with milk and vanilla. Add to egg mixture and mix thoroughly. Bake in 3 well greased round cake pans for 25 - 30 minutes. Cool completely before icing.

Icing Directions:
Combine powdered sugar, sour cream and cool whip, mixing thoroughly. Add vanilla and about half of coconut. Ice cake. Sprinkle remaining coconut on top layer of icing.
