1 (2-lb.) pkg. frozen hash brown potatoes (shredded)
1 tsp. salt
1/4 tsp. black pepper
1/2 c. onion, chopped
1 (10.5-oz.) can cream of mushroom soup
1 c. sour cream
1 1/2 c. Velveeta or Queso cheese, cubed
1 1/2 c. cheddar cheese, grated

Combine all ingredients and bake, 350º. for 45 minutes or till baked through.

Served this at Lindsay's baptism and used Queso cheese instead of Velveeta (Queso is American cheese in a box like Velveeta). The result was creamy and delicious.
