Ingredients:  
Ingredients:  
3 eggs (beaten)
3/4 cup oil
3/4 cup butter milk
2 cups sugar
2 tsp vanilla
Mix all this together
Then add
2 cups all purpose plain flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
Then add
1 can ( 8 0z) crushed pineapple ( don't drain)
2 cups grated carrots ( peal before you grate them)
1 cup raisins
1 cup coconut ( shredded )
1 cup chopped pecans

ICING
With the electric mixer
2 lbs bag of Powdered sugar
12 oz ( 1 and 1/2 blocks) cream cheese- Softened
1 stick butter -Softened
2 tsp lemon extract--not juice ( this is in spice section)

Directions:
Directions:
Preheat oven at 325º
Grease and flour 2 or 3 round cake pans
Bake for 30 min
Let cool then frost with icing
Spread a little in between the layers then do top then sides.
