1 onion, cut into 1/2" slices
1/2 c ketchup
2 tbsp molasses
1 clove minced garlic
2 tsp spicy brown mustard
2 tsp cider vinegar
1/4 tsp pepper
3 red, yellow or green peppers
1 1/2 lb skirt steak
1/4 tsp salt

Directions:
Prepare the grill for cooking. Finely chop 3 onion slices, combine with ketchup, molasses, garlic, mustard, and vinegar. In large bowl, combine peppers, remaining onion, and 2 tbsp ketchup mixture. Place mixture in center of 1 foil sheet. top with remaining foil. Fold edges together to form sealed package. Grill package over direct heat about 12 minutes. Transfer to undirect heat, cook until vegetables are tender, 5-7 minutes. Sprinkle both sides of steak strips with salt and pepper. Grill over direct heat turning once until browned, about 5 minutes per side. Move to indirect heat, brush both sides of steak with remaining ketchup mixture and grill about 3 minutes more per side until done. Serve steak and peppers together.
