2-10oz. pkg. frozen spinach
1 can condensed cream of mushroom soup
3 tbsp. butter
1 small onion, chopped
1-4oz. can sliced mushrooms
4 eggs
1/4 c bread crumbs, dried
1/4 c. parmesan cheese, grated
1/8 tsp. pepper
1/4 tsp nutmeg

Thaw spinach under hot water. Rinse and press out water. Melt butter over medium heat. Add drained mushrooms and onion; saute. Beat eggs and stir in bread crumbs, soup, 2 tbsp. parmesan cheese, pepper and nutmeg. Mix together. Add spinach and onion/mushroom mixture. Put in well greased 9" square pan. Sprinkle with remaining cheese and bake at 325º for 35 minutes uncovered. Cut into 1 1/2" squares. If doubling recipe use 9 eggs.
