2 c. fine-ground self-rising corn meal (Hurricane Shoals cornmeal is ideal)
1/2 tsp. salt
1 1/2 c. buttermilk
2 Tbsp. vegetable oil

Directions:
Directions:
Preheat oven to 300º.
In a medium bowl, mix all ingredients with a spoon until well-combined. With your (very clean) hands, squeeze the dough to get all the lumps out; then shape into 4 corn pones.
Place on a very well-greased baking sheet or cast iron griddle. Pat top of each pone lightly with oil.
Bake until lightly browned (about 45 minutes); turn when bottom is brown and continue baking 30 minutes.
